ROASTED PUMPKIN AND QUINOA SALAD

INGREDIENTS:

  • 200g Pumpkin medium diced
  • 60g Red Onion sliced in wedges
  • 10g Garlic
  • 80g Quinoa boiled until soft
  • 100g Baby Kale
  • 1 Avocado sliced
  • 50g Feta cheese
  • 20g Raw Walnuts
  • 30ml Olive oil
  • 3g Salt
  • 2g Black pepper

PREP: 

  1. Toss the Pumpkin, red Onion and Garlic with Olive oil, Salt and Pepper and roast in the Oven over medium heath until soft.
  2. In a large bowl add the baby Kale, Pumpkin roasted, red Onion roasted, Quinoa and Walnuts drizzle with Olive oil and toss very well.
  3. Serve in a deep plate with Feta cheese crumbled on top.
