ROASTED PUMPKIN AND QUINOA SALAD
INGREDIENTS:
- 200g Pumpkin medium diced
- 60g Red Onion sliced in wedges
- 10g Garlic
- 80g Quinoa boiled until soft
- 100g Baby Kale
- 1 Avocado sliced
- 50g Feta cheese
- 20g Raw Walnuts
- 30ml Olive oil
- 3g Salt
- 2g Black pepper
PREP:
- Toss the Pumpkin, red Onion and Garlic with Olive oil, Salt and Pepper and roast in the Oven over medium heath until soft.
- In a large bowl add the baby Kale, Pumpkin roasted, red Onion roasted, Quinoa and Walnuts drizzle with Olive oil and toss very well.
- Serve in a deep plate with Feta cheese crumbled on top.
