- 1 thick slice of Whole Grain Bread toasted
- 1 Avocado
- 2ml Lemon juice
- 100g Cherry tomatoes cut in 1/2
- 5g picked Basil
- 10g Snow Pea sprouts cut in half
- 5g toasted Pine nuts
- 5ml extra Virgin olive oil
- 15g low fat Ricotta cheese
- 0.2g Salt
- 0.1g Pepper
- On a bowl mash the Avocado with the Lemon juice, Salt and Pepper. Set aside.
- On another bowl mix the Cherry tomatoes, Snow Pea sprouts, Basil, Pine nuts and Olive oil. Set aside.
- Brush the bread with Olive oil and toast until golden brown.
- To assemble cover the toasted bread with the Avocado mixture, then put the Tomato mixture on top and the Ricotta over it.
- Finish with a drizzle of Olive oil and put a Lemon wedge on the side.
