• 1 thick slice of Whole Grain Bread toasted
  • 1 Avocado
  • 2ml Lemon juice
  • 100g Cherry tomatoes cut in 1/2
  • 5g picked Basil
  • 10g Snow Pea sprouts cut in half
  • 5g toasted Pine nuts
  • 5ml extra Virgin olive oil
  • 15g low fat Ricotta cheese
  • 0.2g Salt
  • 0.1g Pepper


  • On a bowl mash the Avocado with the Lemon juice, Salt and Pepper. Set aside.
  • On another bowl mix the Cherry tomatoes, Snow Pea sprouts, Basil, Pine nuts and Olive oil. Set aside.
  • Brush the bread with Olive oil and toast until golden brown.
  • To assemble cover the toasted bread with the Avocado mixture, then put the Tomato mixture on top and the Ricotta over it.
  • Finish with a drizzle of Olive oil and put a Lemon wedge on the side.
